12 flower heads
1 kg sugar
2 lemons
2 tble spoons white wine vinegar
10 litres of water
wash flower heads then snip flowers of
boil 1l of water with the sugar until dissolved
pour other 9 litres of water into sterilised bucket
add the flower heads
add the ww vinegar
zest both lemons and add, then squeeze and spoon the pulp in as well
add sugar water and stir
leave 48hrs then strain through sieve , then through a cloth and bottle ( I use two litre pop bottles.
Leave a couple of weeks and hey presto
a couple of days after bottling just let the gas out of the bottles
